Tirokafteri, which means “hot”, spicy cheese, is the Greek name of this delicacy.
4 small hot peppers (any kind)
4 ounces feta cheese
A pinch of black pepper
2-3 tbsp olive oil
Salt if needed (taste before you add salt)
Preparation: Cut the hot peppers in small pieces and melt them with a pestle. They don’t melt completely but they release some liquid, aroma and taste. Add the feta cheese (melted with a fork) and mix to absorb all the pepper stuff. Add the oil and the pepper and mix very well. Taste and add a pinch of salt if needed. Usually feta cheese is salty enough.
Note: Wash your hands right after you cut the peppers. It really burns if you touch your eyes or other sensitive spots.
Serve and enjoy almost with any dish!
